About Omelets
An omelet is a versatile egg dish that can be served plain or filled with cheese, vegetables, herbs, or cooked meat. The best results come from moderate heat and fillings prepared before the eggs enter the pan.
Basic Method
- Whisk eggs until the yolks and whites are fully combined, then season lightly.
- Heat a lightly buttered nonstick skillet over medium-low heat.
- Add the eggs and gently draw the cooked edges toward the center, allowing uncooked egg to flow underneath.
- When the surface is nearly set, add cooked fillings to one half.
- Fold the omelet over the fillings and remove it from the pan while the eggs remain tender.
Filling Ideas
- Cheddar, Swiss, provolone, feta, or blue cheese
- Onion, peppers, tomato, spinach, mushrooms, olives, or asparagus
- Bacon, sausage, smoked salmon, or avocado
Cook vegetables and meats beforehand, and avoid overfilling so the omelet folds cleanly.
